If you buy an old motorhome, the most important things are: transmission, tires, radiator and make sure the fridge works.
A portable Honda generator will use less fuel than the built-in one it has. The cost of fuel isn’t an issue, it’s that you have to carry all of it with you.

I’m all about the machinery too, but for this I’d rather be out by the tanks and hoses making sure everything is OK. I have been doing exactly this water arrangement for years... almost 20 of ‘em. It works great. I carry extra water on the trailer in food-grade barrels and I bring empty ones for my gray water, also on the trailer, so I’ve got about 100 gallons for myself and the First Mate, mostly for the shower. ...
