Here, eggs are $1.49 a dozen for the local factory swill at walmart, or free (free range and hormone free) right down the road. All you can carry, just wash 'em yourself
Yeah. I'm spoiled. Yolks that are sunset orange and have to be whipped to liquify are something few get to see.
If you've never had an omlette made from fresh, warm eggs, you're missing a wonderful treat. (And no, those $6/dozen hippie-dippy "natural organic" eggs in the expensive cartons dont even come close. Hehehe). Completely different flavor than anything in the store.

And here I am in Oregon paying $4/dozen for good local eggs... But soon we will have ducks and then we'll get some chickens.
Duck eggs make super omelets and are far superior to chicken eggs for baking, something about different proteins than chicken eggs. Also they're naturally alkaline while chicken eggs are usually acidic, I've known people who've claimed to not be able to digest chicken eggs comfortably but were fine with duck eggs. And even more, ducks are way cuter and entertaining to have around than chickens.

We made omelets most mornings for breakfast. We used egg white in a carton, I sautéed up some tomato, mushroom, and onion, put on some spices and cheese, just used a single small pan on my camping stove. As complex as it sounds, took about 10 minutes total (plus 15 minutes clean up, eggs being what they are).

Use a paper bowl that has a wax(ish) lining, and whisk the eggs in there. You can whisk all the eggs for your omelettes in just a few bowls, depending on how many you're making. Put the bowls in your burn pile when done. Serve on paper plates. Burn pile when done. Use a non-stick skillet, wipe out with a paper towel & a dash of detergent. Only things that will need to be washed are your knives, silverware and cutting surface (unless you pre-sliced things before heading to the playa). Your 15 minutes of cleaning has just become 5. I made omeletes about have the mornings, with freshly cut and sauteed vegetables. Highly recommend liquid egg or liquid egg white, which was very easy to use - no shells to deal with.

Kelsier Mexicans don't make rolled up enchiladas. It's too much trouble for daily meals. I was raised in Pico Rivera and married a Mexican. They make chilaquiles. That is what Figjam is describing. I don't cook because that's what husbands are for but if I had to I could make all kinds of great spicy dishes.

I'm always down to learn something new in the culinary realms. I had always thought chilaquiles were an egg based dish (with the tortillas of course), but that's probably because that is how my lady likes them. Figjam's description just sounds like some flat layered Microwave enchiladas. Chilaquiles is a much more fun term. You are right about the egg. I like my enchiladas with 2 fried eggs on top. That's the Mexican way. It's just a baby step from enchiladas to Huevos Rancheros. Both are made with tortillas, cheese onions and a sauce. Now I'm hungry.
