I think it's more of a chutney than a jam, per se. You can ask uncle Google what's in it, it had the consistency of a thick sauce/chutney, and just the right mix of bacon, sweet things (molasses, maybe even apple), and other stuff. Very magical. Much to my delight the food truck's offerings were awesome and I hit it off with the people behind it, and over the course of subsequent visits we talked about camping and my plans to get to the playa, and somewhere along the way they offered to make me a mason jar of the stuff to take to the playa.

While you could use it as a sandwich spread or just eat it by itself with a spoon, we also found it worked great with breakfast potatoes. I pre-cook loads of home fries, and we found scooping some into the pan when heating in the morning kicked them up a few notches. We also had the luxury of a pizza oven, and later in the week crossed the threshold of bacon jam and prosciutto as a valid pizza topping. As a spread, it works great with grilled cheese or on a burger/dog, but can't wait to get my hands on more to try it with more dishes. If you also enjoy the wonders of bacon, this is definitely worth checking out.
