Gluten Free?
I'm considering getting permits and what not to serve some food next year, I had the idea to cater to the Gluten Free Burners..
Guess I'm wondering if there are enough of you to even bother?

How many is "enough"? For people with special diets, finding a spot that has tasty things they can eat without worry is always wonderful, and for people who can eat gluten it might be a nice introduction to how good something can taste without it. The only person who needs to enjoy it is you, and the old "if you build it" trope holds true at Burning Man.

I agree. I guess I just wanted to make sure that at least SOME people would be interested.Making and Storing the product will be a little tricky so I'd hate for it to all end up going back home with me.

A solid 15% of my camp are gluten free for legitimately diagnosed medical reasons and a few more were gluten free by choice. Yay anecodtal evidence and what have you, but I imagine you would totally make someone's burn. Just remember that public food service needs to be permitted and what not.

I'm a career cook so I already knew of/ have dealt with the random permits...
I'm also a Nevada Native so I feel pretty prepared! Ha!

People on the playa will eat anything. But you can create a community for people with that specific interest. They will probably enjoy communing. The trick is to find/create a sub community without becoming overexposed. Have a layered communication plan, from eplaya/regionals/FB, to connecting with health oriented camps, to ? through which you can dynamically expand and contract your publicity in tune with your resources.

The gluten-free person in my camp last year was unhappy about having to miss the grilled-Cheese smackdown. I did find her some gluten-free bread during the event and she was grateful.
It's very tempting to tell you to cater exclusively to those with the sensitivity, because they are so excluded on the playa food culture, but I don't think that's the gift you want to make.
Although, we could expand on this thread to include gluten-free tips...

1) You may open their eyes to how good gluten free food can potentially be. The last time I was in a position to get a gluten free version of something I asked the waitress and she flat out told me that it "wasn't very good". Interactions like that make me reluctant to eat out with my glutenless friends. If I discovered that it didn't have to suck it would make things better for everyone.
2) You may open their eyes to the actual benefits of being gluten free. A lot of people with mild celiac disease may not realize what gluten is doing to them. I had a friend who took it for granted that food made you feel that way until she was diagnosed. Fucking eye opening for her. Imagine accidentally showing even one person that they could enjoy a better quality of living with a small modification to their diet.
3) Either way you're giving people food, which is awesome.
Just make sure you make a big point of mentioning to each diner that the food is gluten free so that points 1 and 2 can take place.

pie crusts are all of a nutcrumble
gravy was a challenge..arrowroot .but since the turkeys are deep fat fried I dont have the pan drippings and had to buy it

so I went to the "party of the year" capricorn do and ever so carefully prepared chateaubriand and asparagus and tiny potatoes and labeled it all as organic and "Paleo"...then a person who was waiting for me to set down the food said"do you know the source?"

A friend of mine last year brought a pizza oven and made gluten free vegan pizzas to gift. Late one night, she was standing at her camp's bar and was handing out pizza. She spotted a dude nearby kind of eyeing it, so she offered. He said "Aw, no thanks... I can't eat gluten."
Fuck Christmas Morning, I'm pretty sure that piece of pizza made memories for that dude. Sure as hell warms my heart.

Tangent story, I had a friend who found out he had Celiac Disease right before we went on a trip. We were talking about food and asked, "Is it gluten free?" To which a friend responded, "What is gluten and why is it free?" We had a good laugh, explained it and turned it into a little chant, 'When I say gluten you say FREE!" Ya know, like they do at concerts....

I think it's a great idea! I wasn't gluten free at my last burn but I am now. There are many of us. Will be a different experience this year for sure.

I have heard baked playa is gluten free. Just add a bit of water, smash it flat and bake at 325 until crispy, then add the sauces, etc, bake for another 10 -15 minutes at 400.
