This year our camp would like to gift food.
We are planning on doing it on a small scale: Our plan is to hand out 100 Tacos on Tuesday.
The way I read the rules we need to get a permit for this. Okay, I can manage that.
Except when I got to the required equipment list. : SANITIZER and SANITIZER TEST STRIPS
So I looked up SANITIZER TEST STRIPS and determined that they are a Ph strip that tests the water that is used to wash the dishes.
That alone isn't too bad, it looks like I need to bring along some bleach and the test strips, but I am not sure what it all means.
We plan to prepare the food in our RV kitchens. The main issue is that we don't have "three bay sinks".
Would I be okay with a bucket? Or two buckets, one for sanitizing the dishes and one for the wiping cloths?

Stips aren't for PH they are for measuring sanitizer concentration, which is specified in the docs.
I saw a table (piece of plywood that had legs and cutouts on top for 3 plastic dish tubs) in use last weekend.
I'd guess that 3 tubs sitting on a table would suffice.

1st basin- Wash dishes with soap and warm water
2nd basin- Rinse dishes in clean water
3rd basin- Sanitize the dishes
Use 50 parts per million (ppm) of a chlorine based sanitizer
concentration or 200-300 ppm of a quaternary ammonia sanitizer
Check this sanitizer concentration with test strips
Submerge dishes in sanitizer for about 1 minute
Do not rinse the dishes off after sanitizing
Air dry and cover or store to protect them from dust and dirt

Can you elaborate on a few things for me?
My wife is all concerned that we are going to pay $50 for a permit and get denied.
Can you tell me if I will have a problem getting the permit? Our camp intends on serving 100 - 200 tacos. The taco shells will be pre-made store bought so we won't have to do any deep fat frying.
Cook the meat up, have it sitting in a large electric roaster (sort of like a giant crock pot), slice up the lettuce, tomatoes, etc. Start an assembly line, build the taco, wrap in an a sandwhich wrap and hand it out.
There will be not plates, no eating utensils.We will provide a trash can to collect the wraps.
We'll be buying the supplies from a grocery store. The stuff that needs to be kept cold will be in our RV refrigerators. The food preparation will be done in the RVs but the assembly will likely be done outside on a folding table.
I plan on having a bucket with water/bleach to keep "wiping rags" handy. We'll wipe all the counters / tables down before we start, and plan on "sanitizing" all the serving utensils before we start.
We only plan on doing this once.

There won't be plates but there will be cooking and serving utensils. I doubt you could get away with not having to sanitize those.
In any case...if you want to be really sure, there is no substitute for talking to the actual people who will give out the permit. Just to simplify matters, call up and say you're serving tacos to a party and want to make sure your process will pass inspection.
