Irish became dependent as ever increasing land rents forced the Irish to grow only potatoes because they required far less land to cultivate.
All money earned working (if paid) went to Landlord to pay for land rents to maintain right to grow crop.
The Irish prior to this survived on milk butter grain etc as all other European countries did at the time, but due to pressures created by The ruling establishment The Crown, the Irish were forced to become less diverse in their cultivation to ensure a father could support his family. Land rents paid to the ruling classes who were granted all the lands created the circumstances that resulted in the Great Irish Famine. Then the blight occurred and the rest is history.
The population fell by 25% from 8million
In the subsequent years emigration was the main reason for population decline, thus why the Irish have such a large diaspora

Whiskey (Scotch, Bourbon etc) keep some mash in & are aged. The barrels they age in affect their flavor.
Gin is basically vodka with juniper added after distillation ("basically" being the key word).
Etc...
As for what they are distilled from... that only matters if there are regulations on what you can call something. "Rye" must contain a certain amount of that grain to legally use that name, in Britain a "Single Malt Whiskey" must be made from Barley, etc. US Vodka is: "neutral spirits, so distilled, or so treated after distillation with charcoal or other materials, as to be without distinctive character, aroma, taste or color." Pretty much anything can be used to become a neutral spirit - fruit, grain, potato...
As for brandy or vodka from grapes - again, depends on the distillation. If you leave some grape mash in, brandy. If you distill the mash out & filter it, vodka.

If anyone is going to do a "tiki bar", I hope they do not try to use a thatched roof... Anything that will dry up and flake/fall apart is not going to be let past the gate.
