No. It didn't.

Le Simon must be tired of all kitschy bacony crap crap that has been trendy for a few years now, compounded by bacon being a big deal for most burners and burners tend to get pretty ridiculous about things they think are a big deal...

And being the rabble-rouser he is, now he's out here rousing the rabble. But the bacon in it's pure form that le Capitaine is talking about will never die. So far, bacon is pretty much the crowning achievement of human gastronomy on this planet.

And it's here to stay.



Incidentally, today was the day we sliced and vacuumed sealed the bacon. The bacon we smoked from the hogs we raised.

Today was a good day.

Well, there's the argument that "near perfect" is an utterly meaningless phrase. Near perfect for whom, or in contention with what? With all other foods on the planet? I think "the fact" that my mother-in-law could die if she ate it due to the ridiculous levels of salt it contains is a pretty good argument for it being less than "perfect" (she's not alone in being on a very restricted sodium diet, due to our modern way of eating way too much food that's been processed with way too much salt ... like bacon)

I'm sorry that your mother in law grew up in the culinary dark ages of America and cannot handle eating bacon after a life time of margarine and sucralose consumption... Sure, blame it on the bacon... Which, by the way is pretty far from 'modern' as you have suggested... The unfortunate product of industrialization that you see in your grocery store labeled bacon, is, by definition bacon but in the same way that Lauder's is scotch.

The basic principles of this food haven't changed in centuries and is arguably one of the most popular foods in the western world. Bacon and even more so charcuterie as a whole has been one of the great influencing factors in the development of the human race. If you don't believe me you can read this book, this book and this book. But then again, I don't really expect you to...

So... I totally get the idea that the stupid perpetuation of internet bacon memes has to stop, but the fault isn't with bacon, its our dumbed down 'brainwashed by the internet' meme perpetuating consumer culture. To be clear, I'm not brainlessly repeating some dumb meme because it's trendy, I'm defending bacon (charcuterie as a whole, but specifically bacon) as a pinnacle of culinary artistry because I am an artist and bacon is my art.

Not that I need to defend my credentials to likes of you, but after spending a dozen years as a professional chef, now raising my own animals for meat and living in one of the most vibrant agricultural communities in the country, It is I who must feel sorry for you and the food desert you inhabit. Sure, the Bay might be a great place for a vegetarian to eat fake bacon, but at the end of the day it is just that. Fake.

I worked in the hog kill for a few weeks..

I do not eat pig..

Workes had to walk through part of the beef kill to get to the hog line..Every day there was a pile of puke just outside the kill.

Very little beef in the following 53 years..

My son worked as a chicken/turkey catcher.. One of the nastiest job of man kind.

We do not eat bird at our house..

I worked at a pork processing plant...saw em killed and broken down..only change is, I will never eat pork rinds again...smells just like the scalding process. Still love Bacon.
