Huntress and Chef...Seeks a Kitchen/Camp!
Hello! I am a 7 year burner that is returning to the playa after a 5 year hiatus. I am currently a chef and I hope to bring the abundant wild fish, game, and vegetables I have personally harvested from our ranch in Texas to the playa. I'm dreaming of mesquite grilled rack of venison, crispy fried black drum and chips, wild boar charcuterie, and fermented pickles and kimchis in all their spicy/sour/sweet encarnations. I spent many years as a club DJ and producer. I no longer DJ as a career, but sound equipment maintenance and installation is a skill I would joyfully contribute as well.
I would love to share my passion with a camp who appreciates the abundance of nature. Are my people out there?

I'm not sure it's a good fit for my camp, but you are sure welcome to make yourself comfy here in my house.

If you've been on a 5-year hiatus, make sure that any camp you join is clear on who you're cooking for, and how many. If you're serving even 1 cut lime to the general public, or cooking privately for more than 125 people, the camp needs to be registered with the Nevada Dept of Health and have a plan for maintaining a clean prep area. You're a chef, so it's probably second nature to you, but they will (and have) shut down camps who don't have the registration.

How? Steaks are gluten-free naturally, since they don't grow on wheat stalks. And I guarantee we could have trapped/captured/lured Eric over for them fermented pickles and cabbage!
The reason I split out of silicon valley into the Sierra Foothills is my canine teeth and strong desire to actually taste the meet I eat.

Thank you all for the info and interest. I should have been more specific! I'm looking to cook for a camp of about 20 people maybe 4 wild food meals during the week. Could be a little more or less...I can make it stretch. I have equipment for a full outdoor kitchen...I just dont particularly want to haul it to the playa and set up/break down myself. Would prefer to join up with a pre-existing camp with a kitchen plan in place. I dont mind taking general meal shifts either for the camp or public. I have celiacs so I cook gluten free.

In some states farms are allowed to harvest a certain number of poultry or rabbits a year and sell the meat legally, I know that in the states I have farmed in this was the case. I don't know about Texas...
Anything with hooves has to be killed in a USDA slaughter-house otherwise you cannot sell it. It wouldn't be legal to serve in a restaurant and I usually interpret the NV health guidelines for BM to be the same as those for restaurants, which tend to be pretty universal across the US.
Regarding the OP: I wish I was going this year and if I was I would fire the person in charge of food in my camp to make room for you.. and we could talk about charcuterie and all sorts of dead and fermented magic all week long...

Well thanks, Lefrench. BTW...yes wild game (and all domestic livestock) has to be processed in a USDA inspected facility to be served to the public. Private supper clubs...like I would like to have on the playa...fall in a grey area.

Well, not really. Planning a supper club (that is, planning a meal service for people who are not a part of your camp) would most definitely require a food permit.
As for bringing/cooking game or other nibbles for campmates, there should be no problem as long as the camp is under 125 people. Good luck in finding a camp.

I'm speaking of the legality of serving wild game or home harvested livestock/dairy/etc... I can serve venison I harvested at a private dinner...not at a restaurant or the general public. Yes, a food permit is a given for over 125 people (which I said I am trying to serve about 20 campmates).

Ah, I thought you were talking about a dream of a supper club camp. Those had been tried before, and NV determined that they required a permit.
