In addition to the stuff above, you can find tons of canned veggies in just about any supermarket. Lots of salt in them usually but hey, it's vegan and will last you through the nuclear apocalypse.

Veggie head here, All the stores listed will be perfect for you to find your eats. Trader Joes or Whole Foods will not do ya wrong, they will have plenty of variety.

Trader Joe's is now owned by Aldi. Trader Joe's will cost less than Whole Foods. Both, and the others people have suggested, are good to visit. Many vegans work in the stores and can help with ideas. You can ask them.
There are silken tofu products that are packaged. No refrigeration. If you cannot find it, try a larger Asian grocery. You can find Mori-Nu silken tofu.
With the high temperature, low humidity and altitude, many people are drawn to salty and strongly flavored foods. It is also a good idea to bring some of your personal komfort essen. You will also lose your appetite, and eat 1/2 what you think you will need.
You might tour the Alternative Energy Zone village at burning man. They can show solar cooking.

Everyone reacts differently, and I know people who eat more on the playa than they do "at home". From anecdotal evidence it seems that most people eat less, in some cases a lot less (I know I do), but that is not the case for everyone, and on your first trip you're not going to know how your body is going to react. You're better off with more food, and not being hungry, then with not enough food, and there being no-where to get it. If you bring your "safety" food as canned goods, it can always be donated to the tribe in Nixon (look for the neon flags).

If you decide to shop at a Trader Joe's, ask an employee for the vegan list. They'll have a list with every vegan item in the store, and it will make your shopping faster.

To be totally straight with you, RAINBOW GROCERY in San Francisco may be the Greatest grocery store on the planet for Vegans. It has the largest bulk food section I've ever seen, and can easily cover your needs for Burning Man.
Sounds like the poster is looking to cover all their needs in the minimum amount of time. If you flew into SF and only had 1 hour to buy everything you needed for the Playa, Rainbow would be the place to go.

yeah, I try to eat healthy, but I typically lose appetite on playa. 2013 - one of my mates and I just finished a brutal shift and were going to get trashed that evening in an epic pub crawl on the 9 side. I said "hold up so I can eat dinner" Popped the top on a can f ravioli, tilt head back and ate dinner in 35 seconds. Unless dinner is the occasion, i just stuff something down.
