Just working on my food permit.
What temp does water boil at on the playa?
At sea level - 100 degrees.
I need to keep hot stuff at 140 degrees, so knowing what the temp of boiling is would be very useful.

Fishy has the right numbers for F and C boiling point at 4000 feet.
Since pathogen growth slows markedly at 135 F I think 140 F is the temperature you are looking for. I am not familiar with Nevada regulations but all state food inspectors I know want a thermometer regularly taking temperatures. Something like this is fairly cheap and easily calibrated:

As mentioned, it is vital that we keep track of degrees Celcius (metric) versus degrees Fahrenheit (most common in the USA).
In centigrades, water freezes at 0 C and boils at 100 C (at sea level). In Fahrenheit, water freezes at 32 F and boils at 212 F. Scientists are mostly using the metric system now, even here in the stubborn USA.

Don't get me started on how we write dates in this country. :lol:

As others have suggested, it sounds like you may be confused between farenheit and celsius. You may also be dialing too far into detail on things that won't really matter. Most camp kitchen gear doesn't get scientifically accurate to a single degrees, and in the case of water boiling, that is one measurement you don't even need a thermometer for. It's boiling water - when you see it bubbling, it's boiling.

Yes, it's true that water has a lower boiling point at higher elevation, but at 4400 feet it's only a slight difference. There are other factors too (fuel efficiency of propane stoves, etc), but when it comes to boiling water... it's still visual. If you spend a couple seconds searching on the internet, you'd find plenty of info on the subject, including the chart below...

If you need to maintain some other water temp, use a cooking thermometer (they sell for as little as $10-$15, if you don't already have one. That's an especially good idea if some of the people helping may not be experienced cooks.
