My first burn. I arrived late at night in the dark alone. I had no idea where to go, or where to camp, or even where the street edges were. I just parked at the outer edge on L and decided to see what it looked like in the morning. When I woke up and looked around, a man walked over from what would be across the street with a hot cup of coffee to offer me. A good spot, a good neighbor, we are still in touch.

I made some crusty bread, and want to try melting some raclette cheese over the fire. Not sure how it’s done exactly. I have some sticks and the means to clean up an eventual melted cheese mess. What could go wrong?

After reading Cannery Row, I’ll admit I was very curious about what a beer milkshake would taste like. I feel like skimming through the book again to see if Doc was disappointed or not.

That’s a very adventurous bunch of flavors.

Last week I accidentally mixed cocoa mix into what I thought was hazelnut coffee creamer, but was actually sharp cheddar cheese powder. Some say it is a “thing”, but I don’t know what to put it on. It was bad in coffee. It was weird on chili. Maybe corn on the cob?

Cheddar coffee doesn’t sound very good. Chuckles.

The caviar technique is something new I’m adding to my lounge. I’ll be able to make vermouth caviar to go with martinis. Or any flavor basically I want to make.

The caviar is to go with flaming dragons blood cocktail. Basically a shimmery raspberry thyme daiquiri with fire 🔥

I now have a cold smoker, so that allows me to Infuse smokes into drinks, cheese, and other products in the lounge.
Currently, I’m using Cherrywood, but it could be anything including peppercorns, Rosemary, or other woods and herbs.

I already make and keep Guinness ice cream. And yes I’m talking full on ice cream. I have two no ice ice cream freezer/makers in the lounge. This was a natural progression to go with the breakfast stout. I’m looking at doing a dragons milk ice cream also.
I’m making ice cream bars, so they’re just kept in the freezer in the lounge.

The foams and airs are just something new I’m learning about.
It’s just a different way to deliver flavor into a drink using a stable foam.


Since you mentioned cheese powder.

Here is a hack we used.
At a big box store we bought some Cheetos macaroni kind of like macaroni and cheese. It wasn’t very good as macaroni and cheese.
It sat on the shelf until…
We made popcorn and sprinkle the cheese pack all over it, it was like having Cheetos popcorn, which was pretty good.

Here is some sourdough I made.
My starter is about 15 years old.
It makes a great Panini.

“The party’s over.” Nat King Cole’s version of just about any song is supremely enunciated and often seems wistful. I think mainly because you’re really comprehending what you felt familiar with, but hadn’t really listened to, not until you heard Nat King Cole sing it. Funny thing is it could be an old standard, a song you’ve heard all your life, and hell, he likely recorded it before you were born too, or near-bouts.

I honestly thought of Dandy Don Meredith’s heartfelt swipes at a similar country hit (“Turn out the lights, the party’s over.”) late into Monday Night Football broadcasts, that thankfully never got beyond a few lines; his goofy curtain-pullings on contests not ending heroically, or being mercilessly drawn out. It signaled finality, and relief too, “have a laugh, you’ve earned it. It’s finally over.” If you had to go to work or school on the east coast Tuesday morning, it could be very late. Wasn’t the clownish remorse in this version appropriate for a losing contest, and a rough morning start, in not too many hours? Silly and wry, my preference tonight. I can try again next week, next season too.

It’s the second night here I’ve noticed any chill. Fire was a nice idea.

Sets a blue handblown glass flask, full of Purple Toad Apple Wine, fortified with moonshine, on the makeshift table, made with a stack of old shredded bald tires, and a bent, crunched, crusty, caution sign set on top. The table sits in front of dirty, dusty oxblood, leather Chesterfield sofa

*as another spinning chiindii spirit dances by*

Sips purple from the flask.
Hits his apparatus.
(Leather squeezes) Leans back as he lets out a sigh of pure….

* Pulls from the air… then Dips the rim in a dish of salt to coat
* Pulls from the air… then Squeezes the juice of 1/2 lime into the glass
* Pulls from the air… then Adds ice to fill the glass to the top with large ice cubes.
* Pulls from the air… then Adds a really generous shot of T1 blanco tequila to the glass, filling it about halfway
* Pulls from the air… then Tops it off the remainder of the glass with Coca-Cola
* honors Don Javier, Pulls from his kilt belt… stirs with a big ass knife, the secret to its flavor….

Sits back on the chesterfield.
* Sips glass of Batanga…

I was aware that I have not listened to any Chuck Berry intentionally in ages. Also:

Sorry, no crusty sourdough recently.

It is getting to that time of year for some Yellowstone Chili. We do a robust vegetarian chili. With seasoned ground bison and elk topping. Smiles.. yes I really do make this. Surprisingly enough I can get both here in the natural food co-op we shop.

How about a slutty bear pastry?

Those buns! I went to a mountain restaurant lodge once, in woods so shady, there was always a damp except in the hottest part of summer.

They had a cold salsa and chips on the table. It was actually a cold chili: well canned tomatoes in mid winter, kidney beans, chopped green onion.

Wish I knew how to make those. I have some ideas. I might give it a try.

When we were on our cross-country-cross-Canada-cross-country trip something like almost 15000 miles. We stayed at a place just outside a gate to Yellowstone. They had a bison/elk chili in the restaurant attached to the hotel. It was great. I stole the idea from them. I normally serve slow roasted Tri-tip sliced up for the chili. it can also be on the spicy side.
It’s easier just to cook the elk/bison in a cast iron skillet.
You can add or not add as much meat as you want. Or not at all if you don’t eat meat.
Winter meals.

I like cold mariscos dishes. I made shrimp cocktails yesterday. Mexican style.🍹
Seven seas cocktail is the best.
If you can find one.
That was my introduction to Mexican seafood.. the best seafood in my opinion. Deep fried perch in garlic oil. Was amazing.

Heading for an appointment for a wet steam a cold plunge a hot soak and a wet steam for a couple of hours.
I don’t move around like I used to.
