If you're doing it on an electric stove, you'll want to turn the heat down a tad.

For a gumbo, you'll want a chocolate roux (the browning of the flour is a significant contributor to the flavor profile) which is tricky. It'll begin to turn, then as it browns it'll brown faster and faster. You will literally have to stand on it(ok, not quite literally) and stir constantly. Otherwise quite suddenly it will burn.

Yes, I've retired from Recycle as Volunteer Coordinator and am kickin at the eplaya Bar this year.
