I've learned a thing or two about espresso-making over the years, but I'm still unclear about what's the right packing pressure. Expert opinions seem to range substantially. Where do you weigh in?

Not an espert, but on the grinder I push the tamper/plunger knob

"pretty damn hard" and twist

Never calibrated the push, or use a separate tamper.....That's getting a bit too fussy for me. Sort of like a bartender that perfectly measures every drink,,,,when you know the recipes are there just to put a number on an approximate volume, as if 1/2 oz vs 5/8 oz , makes something totally different....like turning a "Manhattan" into a "New York State"

Fortunately the bar never really closes.
