Recipe Ideas for a person with 15lbs of Spuds lying around
The subject says it all. I was given nearly 20lbs of potatoes recently and I need to get through them before they spoil. Any ideas for recipes that either use a large amount of potato at one time or can be frozen?

One of my favorites is twice baked potatoes. Clean potatoes. Rub down with some olive oil. Poke a few holes in each one to prevent explosions, unless you're into that sort of thing. Preheat oven to 400. Bake on center rack for 1 hour 15 minutes or until they give a little when squeezed. While this is happening cook up bacon until crispy, then crumble. Allow potatoes to cool then cut in half lenghtwise. Scoop out potatoe guts leaving about 1/4 inch of potatoe inside of skin. Put guts, sour cream, and milk or cream in mixing bowl and mix. Add bacon and stir in with spoon. Keep a little bacon out if you want to put over top. Restuff empty potatoe skins. Sprinkle shredded cheddar over top along with more bacon (never enough) and chives if you so desire. Put in baking dish and bake at 350 until warmed through. About fifteen-twenty minutes. Buy beer. Invite friends over. Invite friends to bring beer over. Feast.

World Famous Oooogggooooeeeyy Potato Salad - Wash & Boil Like 10lbs of those studs with the skin on. Boil a half dozen eggs. Peel Potato skin while still warm/ wait for the eggs to cool before you take off shells. A bunch of green onions, a half a jar of pickles- You can even cook bacon and crumble it. cut everything up and dump about a third of the jar of pickle juice in - and a half a jar of ranch dressing, and a blob of mustard (I use the Hot kine) a bunch of pepper and mix together AND you HAve WOrld famous OOOooogggooooeeyy Potato Salad!! Don't tell everyone the recipe!!!! also I have h\found If YOU wash and Dry all the potato and put in the refridge they last alot LONGER. Don't leave in the bag you got them in 'cause on of them is usally rotten and makes the whole group go bad quicker then they would HAVE!

Ohhhh and I made twice baked potatos for the burn last year... Got them all made up and froze them. toook to the burn and untawed and zapped them in DR. Pyros RV!!! THe NAked people loved them.
