Bavarian sauerkraut is amazing. I think they make it with wine vs vinegar so it's a milder flavor.

Never tried it with wine, but the reason they use vinegar is because it's quicker. Real sauerkraut takes time to ferment, but it tastes so much better. And it's much healthier too, especially for your digestive system.

Yeah, I don't think I'll ever eat the stuff with vinegar again. I'll have to keep a closer eye on how they make it.

My Bubbies pickles sit next to my Bubbies Sauerkraut. Both are eaten year round.

Mmmm, Kimchi! I love the sprouted soybeans. The ones I've found always seem to need refrigeration though. I wonder if they have a canned version.

Even the distant smell of Kimchi makes me recoil in utter disgust...it's not for everyone.

As for this pickles being the new bacon stuff, why do I have to choose? I like 'em both! Dill, bread & butter, spicy...you name it I like 'em.

I'm not sure if you can use wine. I've never tried that. and I usually use pickling cucumbers.
