things I just don't understand, pleae help.
Just stuff that doesn't make sense, and, an explanation is needed, to avoid vexation.
anyone with an answer is encouraged to respond.
I'll start:
why, do some hard boiled eggs peel so easy, and others, take half the white with them?

It appears to be related to the age of the egg and the acidity of the egg.
My father made me an egg boiling basket that resembles a deep-fat fryer basket that perfectly fits my boiling pot. First, I let the eggs warm up to room temperature overnight. I get the water to a rapid boil. I plunge my egg basket full of eggs into the boiling water. As soon as the water is boiling again, I time the boiling for 15 minutes. I remove the basket, replace the boiling water with cold water, and then plunge the eggs into the cold water. After about 15 minutes in the cold water, I remove the boiling basket from the water and place it on the counter top to let the eggs dry, and then put the whole thing in the refrigerator, or I might sometimes put the eggs back into the carton. About a year or so ago before I used the above method, I'd often get eggs that were so difficult to peel I'd sometimes slam partially peeled eggs into the trash can while I curse out loud. Currently, I might get an egg or two that cracks during the boiling process, but I have not had to throw away a difficult to peel egg since I started using the boiling basket. I'd take a picture of my boiling basket, but my kitchen is such a shameful mess that I couldn't bear to show it to all cyberspace. Maybe this might be the inspiration it takes for me to clean it up.

I heard that the older the egg the easier to peel. This is because of the breakdown in the protein holding the shell onto the white.
3 week old eggs peel. Fresh eggs do not. Most people boil store bought eggs and their advice is just superstitious. It's actually a science.

I'll just ignore both the science and the superstitions and continue to boil the eggs on the day that I buy them. Since I started boiling them my new way, I haven't had to worry about it. The biggest problem for me with the basket boiling method is that it so easy that I now boil and peal so many eggs that I am getting tired of eating them all the time. I only eat one yolk out of five eggs to cut down on fat and cholesterol. My dogs get the excess yolks. They have gotten good at catching them in the air.

Eat the yolks. I teach nutrition at the local college. I wonder tho.... You say earlier that you let them sit out at room temperature overnight before doing your boiling process. Or rather the opposite..... if just chilling them (i.e. the difference between an hour-old egg from the neighbour's hen and one from the same hen that had been refrigerated) might have an effect on how the membrane sticks.

I let the eggs warm up to keep them from cracking when they hit the boiling water. I'll sometimes boil them right when I get back from the store. I was taught adding white vinegar to the boiling water is required, why I don't know but now I want some hard boiled eggs myself...and tuna, maybe a tuna hard boiled egg sandwhich, hmmm.

why is it I always wander into threads about food when I am hungry.
I've been freezing eggs. Crack and pour into an ice cube tray and freeze. Then you can put them into zip loc bags and use as needed.

Leaving the eggs warm up to room temperture is a good idea, then you don't need the vinegar.

Sail Man--that is the strangest thing I have ever heard, hahaha! I'd surely use one in a drink by mistake. (I wonder can they be fed through an automatic ice maker?)
I'm tempted to try (Jella's?) boil in the ziplock baggie egg omlette; IF I can get over my panckae addiction...and flambe bacon addiction.

Funny you mention it, I saw video just this week of a guy who cracks up one end of the egg, then makes a small hole in the other end, then cups his hand around the egg for stability and blows through the hole and the air pressure ejects the egg out the fractured end, slick as a whistle. Simply catches it with his awaiting other hand

Actually, I learned the tip on a survivalist forum for freezing them. I also store my garden seeds in the freezer.
And just the other day, JKisha pm'd me about storing his Grandma in my freezer until this years Temple Burn, just to keep her fresh, ya know

I don't know if you'll get anybody to blow your eggs for you Ygmir but here is the chemistry on peeling eggs.
Older eggs have had a chance to shrink a bit as the moisture sneaks out through the shell, so, the membranes don't adhere as tightly after cooking. If I am going to peel eggs I buy them a week in advance or, if I can't do that, I rinse them (to get the wax/oil/whatever spray off) and let them sit out for a bit before I boil them.
Plunging them into ice water only helps if you peel them right away. Cracking the eggs in the ice water is the most helpful thing to do, as the egg will shrink just a bit as it cools and the water will sneak in there and and push on the shell for you.

I breed my own garden seeds myself, the mega corporations alter theirs to prevent germination and drive up sales (except for the expensive, fancy, hippie seed companies, sad, really sad) I'm persistant, I buy the low cost mega corp seeds and force them perform. IMHO, It's also a darned good idea to collect and spread the heirloom seeds from old gardens.
