i always add vinegar when i poach an egg, for this very reason .... !

Scrambled or omelette eggs microwave well.

I microwaved eggs once. Just before a party I was giving.

I decided for some reason that I needed hard-boiled eggs. Can't remember why - it might have been for deviled eggs or for the salad - I really don't know. Anyhow, they never made it to where they were previously destined, because the universe had a particularly vile sense of humour that day and forced me to take them off the boil while they were still a bit soft in the middle.

What's a girl to do?

I peeled them all and put them in the microwave.

In my mind the danger had left the situation when the shells were shucked and I just whipped them into the ole microwave with reckless abandon, certain everything would be perfect. And it was. For a time....

The microwave "dinged". I took them out. They looked lovely!
Perfect!!
Just Perfect!
Except for one thing... ...They appeared to be breathing.

In. Out. In. Out. They were puffing up and down like little breathing live beings.

So I leaned in for a closer look. "woow. Lookit that, will you?"

That's when they exploded. Every last one of them. At the exact same moment that the door rang heradling the arrival of my guests.

(and the universe gafawed)

So yes. I answered the door with egg on my face. And in my hair. And in my teeth (because I was smiling at the time - smiling at the breathing eggs).


Needless to say I don't microwave eggs anymore.

Everyone should understand superheating and microwaves.
I often do it on purpose, but you have to understand it, or you could be injured.

You could probably get away with cooking the whole egg, if it was done slowly enough.
I was surprized how well bacon and eggs do in a microwave

I take mine straight from the fridge and put them in cool water from the tap.

Put them on the heat and set the timer for 20min.

When the timer goes of, run them under cold water till the pots cool, then leave set for 10 mins.

Sometimes I still get those eggs that just wont peal! :x

oh delle! screen tissue please. then I thought of looking closely at the eggs in the Alien movies. just don't look at breathing eggs. good rule of thumb.

There is a utensil called an "egg coddler" which is basically a ceramic container into which you crack an egg prior to cooking, where you can then season the egg, scramble it if you like, then put the lid on and boil it in water to cook. An artificial shell, if you like, which is never hard to peel, just unscrew the lid. Image

Ok now that Im dealing with Fresh eggs from our chickens...I have noticed, that if you dont immediately take them out of the boiling water and put them in a ice bath, they will stick when peeling.

The reason that store bought egs dont have this problem alot is by the time you eat a store egg, its already been out of the chicken for 14 days. If you buy a carton of eggs and you dont eat them all on the first day, thats yet another day for each of those eggs to AGE.
The reason a day it was layed egg doesnt peel always right(cause you can boil 6 eggs all layed that day) and it will still happen to one or two, even in a ice water bath... the outer membrane of the egg is attached to the inside lining of the shell, it only sepperates for 3 reason, 1 is to cradle a new chick and 2 & 3 age or heat. As a hot egg out of boiling water it is still slightly attached to the inner shell, expansion of the now cooked whites is keeping it attached to the inner shell, when you immediately put them in ice cold water after boiling it causes it to stop expanding and if cold enough it will contract quite a bit for easy shell removal.

Thanks for pointing that out, turns out I had it wrong. Kelty makes a tent cord with reflective striping in it, and it is called triptease lightline (better I think) not triplite. Find the Honey badger video link. it's in a few threads. Honey badger doesn't give a shit!

At the risk of being off the topic of shelling boiled eggs, I'd like to share an experience I had yesterday morning at Home Town Buffet:

I asked the gentleman at the omelet bar to add tomatoes, chorizo, mushrooms, and a small amount of spinach I got from the salad bar to the whisked egg while it was still liquid. I asked him to add a fair amount of cheese just before he folded the omelet and cooked it well done. (There was nobody behind me in line, so I didn't so feel bad asking for all this.) Once he put the omelet on the plate, I took it to the Mexican food trays, and I covered the omelet with taco meat, cilantro, lettuce, salsa, olives, melted nacho cheese, and sour cream. It was so very good. I mean it was good enough to be served at any restaurant and such a thing would be just deluxe on the playa for breakfast.
