Also, I always considered pancetta to be the italian answer to bacon.

A good prosciutto is a wonderful thing, it's just not something I'd put in the same class as bacon. Nor would I swap it for bacon in a recipe. But get me a nice thin-sliced pancetta, now you're talking. ::drool::
