I saute'd red cabbage and sliced beef in bbq sauce and melted mozzarella over it.

Grilled boneless chicken breast, coleslaw, baked beans and garlic bread ... and a couple Fat Tires from the can.

Panko-crusted oven "fried" pork chop, fresh steamed broccoli, sweet corn on the cob, potato and onion pierogi w/apple sauce and saurkraut. Two glasses of water (one before and one during).

Stir fry with button, crimini, shitaki and bunapi mushrooms; spinach, baby bok choy, snap peas, garlic, onion & ginger; with a soy/ miso/ mirin/ sesame oil & chili paste sauce, over jasmine rice.
We picked up a random tasty herb at the farmers market that the woman selling couldn't identify in English (or clearly enough in Chinese for me to write it down)- I may use that as well. Kind of a spicy minty tasting leaf. We shall see...

Thinking about a cup of applesauce for dessert, or trying my new cake flavored vodka.
But I did bake a pan if chicken thighs in Hawaiian pepper sauce for my lunches all week. With spinach on whole grain tortillas.

1/2 can of Classico Creamy Alfredo with one salmon burger chunked up in it on spaghetti. Pendleton Whiskey on the rocks. Beats the heck out of the sensible and low cal salad I should be eating.

Spinach fettucini and cheese tortillini (my husband likes to mix pastas) with chicken pesto-alfredo, garlic bread, and green beans.

Wednesday is CSA pickup day, I had an awesome butternut squash soup that was impossibly rich AND light along with a BLT and a small salad. The soup was veganized with the substitution of rice milk but you'd never know it. I drank 2 glasses of water one before and one with. All the produce was harvested yesterday.

today was 'breaded', fried eggplant and golden beets with homemade tzatziki
used equal parts rice crumbs and coconut flour, half that amount of nutritional yeast, and some salt and pepper for the breading. (crushed caraway seeds and maybe some masala would have been an amazing addition)
i dipped 1/4 inch slices of eggplant in egg, coated it with the breading and fried them in grapeseed oil (medium side of high on my stove) till golden brown and crispy.
the tzatziki was made from the remains of the tofutti sour cream from mondays tacos/yesterdays quesadilla, a shredded baby cucumber, pressed garlic, juice from 1/2 a lemon, dill weed and s&p.
the beets were pre-baked, i threw them in the oven for about an hour @333° a couple of days ago...today i just peeled them, sliced them, breaded them like the eggplant and fried them too. i think they were tastier than the eggplant. like to try this with yams, zucchini or jicama as well.
enjoyed with a couple of shots of vodka and a couple of cans of lucky.

I've been on this fajita kick lately.. so easy..
1 breast of previously frozen, bulk bought chicken cut in strips. Half of one white onion cut in slices then halved. 4 jalapenos halved, de-seeded and sliced. Toss in large frying pan with olive oil. Seasoned salt and paprika over the top. Fry them bitches up. Place in warmed flour tortilla. Diced tomatoes, low fat sour cream and habanero sauce on top.

Tonight I made chicken cacciatore with chicken thighs browned in olive oil, fresh roasted bellpeppers chopped, red and green, a fresh roasted Anaheim chile chopped, onions and minced garlic sauteed, a large can of petite diced tomatoes, s&p, and some brown and serve yummy bread sticks. No wine, small glass of non-fat milk!
