last night was local apple pork sausage with roasted baby potatoes, green pepper, onion, garlic and sun-dried tomatoes. made gravy out of the pan by adding some chopped onion, leeks, carrots and stock.

There was a piece of wagyu beef on sale at my local Japanese market.
I should have taken a picture before I gulped it down. :(

My garden was freaking awesome this year. 10 different squash plants, 5 pumpkin plants, swan neck gourds, bumpy gourds (that almost look deliciously obscene), 8 varieties of tomato plants, japanese eggplant, soybeans, snap peas, 3 varieties of cucumbers, anaheim chilis, green bell peppers, 5 corn plants, 17 varieties of herbs, numerous flowers. I finally cut down all the old dying vines, thanked Mother Earth, kissed the ground, and planted my winter veggies this morning: Beets, garlic, onions, potatoes, lettuce, broccoli, cauliflower, brussel sprouts, red and green cabbage. I'm not done planting things...

Life is good and extremely happy on the Poo Homestead. :)

Tonight's Dinner is POO's HARVEST STEW: Fresh zucchini, eggplant, pumpkin, spaghetti squash, acorn squash, blue hubbard squash, yellow potatoes, broccoli, cauliflower, onions, corn, peas, carrots, organic vegetable broth, cracked black pepper, sea salt, fresh herbs (culinary & medicinal varieties) :)

Served with fresh homemade southern buttermilk biscuits and real butter and honey.

Pull up a chair!!

I think anything grilled tastes good! I've never tried grilling fish though and I have some cedar planks too!

This isn't for dinner, but it's the best stuffing recipe that I've ever had. I just had to run and get the ingredients in time for the family Thanksgiving potluck, so I thought I'd share:

Apple Sage Stuffing
Ingredients

1 pound ground pork sausage with sage
1 cup fresh diced onions, peppers, celery evenly mixed
1/2 cup dried berry medley (berries and raisin mix or half raisins/half craisins)
1 large Granny Smith apple (rinsed)
1 tablespoon flour
1 (14-ounce) can reduced-sodium chicken broth
1 (6-ounce) box cornbread stuffing mix
cooking spray

Steps

- Preheat oven to 450°F. Preheat large sauté pan on medium-high 2–3 minutes. Crumble sausage into pan (wash hands); stir in trinity mix and berries. Cook 5–7 minutes, stirring often, until meat is well browned and vegetables are tender. Meanwhile, peel apple; cut into small pieces.
- Stir flour into sausage mixture and cook 2 minutes, stirring often, until flour is hot and well blended into mixture.
- Stir in apple, broth, and stuffing mix until well blended. Coat 2-quart baking dish with cooking spray; add stuffing mixture. Bake 20–25 minutes or until golden and internal temperature reaches 165°F. Use a meat thermometer to accurately ensure doneness. Let stand 5 minutes before serving.



Prep and Cook: 40 minutes (Makes 8 servings.)

I don't understand how anyone can believe that eggplant is actually food. It;s a pretty color, though.

@Fishy - Eggplant is not actual food, its my dose of nicotine.
Fun Fact - Large amount of eggplant equates to a cigarette :)

I just had homemade bacon potato salad. bacon, potatoes(red waxy with skin), green onions, grainy dill mustard, s+p, sour cream and mayo. going back for seconds :D

I had Trader Joe's Mediterranean hummus on their whole grain naan (halved & toasted), with diced pearl tomatoes, chopped hothouse cucumber, and red onion w/ a little garlic, sea salt and black pepper. So good. :shock:

And a glass of shiraz.

Although there are a plethora of dining options at my place of work more times than not I roll my own. If it's not a sandwich of whatever I had for dinner the night before it's basically carb based one item fare such as a pasta dish, mac and cheese (redundant) or fried rice. Today I threw together some diced sauteed veggies, some rice, some Bragg's Liquid aminos, leftover roast pork and an egg. I like to rice to get all crunchy, stir, repeat. It's a one pot affair and I generally do enough for several meals. Tonight and tomorrow's dinner/lunch:

Friday I'm off and I promised the hunks of cheese that have been lying around idle for the last two weeks that I would wed them with some elbows so I''ll be set for a few meals next week.
