Re: Best Bacon Ideas EVER!
i haven't seen it here yet but I have a recipe for bacon peanut brittle!
And, though I myself don't drink, found a kick ass recipe for a bacon apple martini that looks like something Doc Pyro would love!
Bacon Apple Martini
•4 oz. of Bacon-infused Vodka
•4 oz. Applejack
•2 oz. Amaretto Liqueur
•2 oz. Pure Maple Syrup
•2 oz. Sparkling Apple Cider
•2-4 slices Candied Bacon, halved crosswise (garnish)
Preparation:
1.Pre-chill 4 martini glasses.
2.In a large cocktail shaker, combine the bacon-infused vodka, applejack, amaretto, sparkling apple cider and maple syrup with ice.
3.Shake until mixture is ice-cold.
4.Strain the cocktail into the 4 chilled glasses and garnish each with 1-2 slices of candied bacon.
5.Serve immediately.

To make Bacon Infused vodka (or bourbon or rum)
Fat washing is a method used to instill the flavor of a fatty substance, such as bacon or ham, into liquor. The meat is added to liquor and infused for a time, then the liquid is chilled and the fatty portion, which floats to the top, is then removed.
Alcohol bonds to fat and sugars easily and fat washing is fairly simple. Though keep in mind that low-sodium bacon doesn’t work as well. When executed properly, fat washing leaves behind the taste of the bacon, but doesn’t retain a greasy taste or texture.
Here is a step by step fat washing process for bacon-infused liquor:
Bacon Fat Washing Ingredients:•5 Thick Slices of Applewood Smoked Bacon.
•1 750 ml bottle of the liquor of your choice (we recommend rum, bourbon or vodka).
Preparation:
1. Cook the bacon in the oven until it is crispy on the outsides but still chewy in the center.
2. Place cooked bacon in a large glass jar (that can be sealed air-tight) with one 750 ml bottle of liquor and allow it to infuse for 24-36 hours (no more than 72 hours) at room temperature.
3. Remove the bacon and then place the jar in the freezer until the bacon fat solidifies at the top.
4. Using a cheese cloth or paper coffee filter, strain the fat from the liquor.
5. Repeat the freezer step if needed and strain again.
6. Refrigerate until ready for use.

Re: Best Bacon Ideas EVER!
I grew up on Bacon avocados. They taste like bacon!
This variety is hard to find in the stores and must be picked at the peak of ripeness to get the full effect of the Bacon flavor. We were lucky enough to live close to a grove with a self serve/leave $ in cash box stand. (I miss those bacon avos soooo much!!) Oh well, I just make bacon and whatever variety of avocado sandwiches these days, close enough.
Lately I've been into applewood smoked bacon, dipped in maple syrup. How do you like your bacon?

Re: Best Bacon Ideas EVER!
Yep, they are difficult to find. The "bacons" as we called them, would sell out FAST! Thankfully, we lived close to a very good grove and we'd buy them as quickly as they set the bags out. I miss them bacons!! Btw, there are two eplayans who live in the Valley of the Moon, where these bacon avocados grow, but they're not talkin' now, are they!!! Maybe because the bacons aren't at peak season around burn time, or they're a hassle to travel with.
oh well...maybe there are other regions they can be found growing, hmmm, hint hint....where's the bacon avocado loving tribe?!!
Here's some proof.

Carefully wrap your bacon in freezer wrap. Then pack it in a box with dry ice and sent it to me.

all the bacon avocados i have come across have been watery and tasteless. even the organic ones. I would LOVE to taste one from where you grew up, i really do want to believe they are more than a disappointing farce!moonrise wrote:I grew up on Bacon avocados. They taste like bacon!

soft fatty bacon drizzled with runny egg yolks and a dash of maple sugar...ohmy.
my favorite use of bacon grease is making caramel popcorn. equal parts maple syrup and bacon fat, plus a couple of dashes of salt...reduce for about 5-10 min on medium heat. pour over air popped corn. zomg. and easy to do on the playa

Throughout Southern California. Try Ventura County. Ojai Valley, a.k.a.The Valley of the Moon, this was where we'd score the Bacon Avos, often it was difficult for we locals to get them at peak season! On the flip side, sometimes during the peak season we'd be given grocery bags overflowing with these bacons. I never thought it was possible to "burn out" on avocado (Bacon Avos no less!) but it is, we made everything with them, yum! The Bacon avocado bacon flavor is in the dark, purple-ish flesh juuuuust on the exterior of the fruit and against the inner skin, that's where the bacon flavor concentrates.

I am SO hungry now. your description made my mouth water!
It could be a fresh off the tree thing, but I think it's more like a completely different strain. The ones here (calgary/edmonton) are super watery. They aren't rich and thick like a Haas. They have virtually no flavor. And they lack of any shade of purple by the skin.
...back to bacon
mix together:
cooked brown basmati rice, diced green pepper, diced avocado, chopped cooked bacon. add a dash of olive oil (or bacon fat!) and some fresh ground pepper. mmm. breakfast, lunch or dinner!
