I was an astronomy nerd as a kid. Of course I understand that it's different below the equator. I was making a joke... A silly joke to be sure, but with me silliness is actually an inducement...

You know I'm a little analytical in the morning. :)

Last Saturday, Suzie and I went to the wedding of Rupert and Marie (of the Joyism group in Santa Cruz). What a great time!

It turned out yummy, however it needed a bit more of a bacon flavor along with the bacon pieces. The recipe calls for butter, I mayuse half bacon fat and half butter next time! Your fudge sounds good!!

bacon fat is the ticket!! perhaps all bacon fat... I've also baked the bacon draining (and saving...of course!!!) the fat and then baking it a little longer to get it good and crispy..practically melts in your mouth!!

I'm going to try toasting some hazelnuts with sea salt and adding that to my next batch....

Ok, now I'm starting to drool! I love hazelnuts and sea salt! How will you do it? toast the hazelnuts first, get them wet and roll in sea salt, or just sprinkle the sea salt on and let dry?

do you use thick cut bacon? And what temp do you bake the bacon at?

think I'll toast the hazelnuts first and rub them in a towel to get the husks off...then toss them with butter (I wonder if I tossed them in bacon fat instead of butter...hmmmmm) and sea salt and toast them again to release the oils and fragrance (yum) them dump them into the peanut butter jam wih a teaspoon of hazelnut extract.....

usually I use reg bacon cuz I think the thick cut gets too tough to chew in the fudge...I set the temp to 400F and cook it for about 20 min, take it out drain the fat to a jar (or just transfer the bacon to another cookie sheet) and cook another 10 min or so. A friend of mine also suggested zapping it in the micowave for 30 - 60 sec to zap whatever water is left but I've never tried that...

Yeah, today was serious eat-eat-eat from start to finish. First about 40 DC burners meet at MeiWah for "Jewish Christmas" Chinese food feast. Then a nap. Then to uncle's house for more eat-eat-eat. Ah, time to pop the pants open and relax.
Happy holidays, y'all.

Thanks every one!
Been having a real nice low/no stress Christmas, Alone just like I wanted. Nice cats (one grump but she's really old), Fire in the stove. Dinner is baking in the oven. And I plan on a hot bath, music and perhaps a phone call to a friend later.
Nicest Christmas I've had in years. Why do I always give in to the madness? I think the the secret is to know what one needs and watch for the universe provide.

Basic Norwegian Christmas marzipan pig. Solid marzipan. (Think of this as the Norwegian equivalent of the US Easter chocolate bunny. Except the pigs are solid, not hollow.)

Image

Five-pound hand-sculpted marzipan pig. 47.000 calories. (I saw it on a Norwegian news site.)

Oooh, me three! I adore marzipan, even scary Norwegian piggies! Nibble their toes off!

Most of my Christmas was directing Larry in the kitchen, we (he) made maple oatmeal scones for our breakfast, then baked cranberry sauce, blackberry pie, and pineapple yams for dinner with the SIL and company. Jeremy was home (the sailor nephew) so that was a good visit. We gave my other nephew, who lives in a group home, a leather jacket. He wore it all evening, until his mom made him take it off for dinner. A lot of the day was otherwise spent curled up on the couch full of painkillers, draped in cats, listening to TV.

Huzzah! My genetic tests came back negative, I do not carry the BRCA1 and BRCA2 gene mutations.

Means I do not carry a higher than normal risk for breast and ovarian cancer (50~80%), just the usual family group risk (~<20%).
